Ingredients

  • For the cupcakes: 12–18 vanilla or chocolate cupcakes (boxed mix or homemade)
  • Paper cupcake liners (blue or themed if you have them)
  • For the frosting: 1 cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • 2–3 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract
  • Blue gel food coloring (royal blue or sky blue)
  • Purple gel food coloring (for ear details)
  • For the decorations: Large candy eyes or white fondant with black edible marker
  • Black decorating gel or melted dark chocolate (for nose and mouth)
  • Marshmallows, fondant, or candy melts for ears
  • Pink or purple candy melts (optional, for inner ear color)
  • Blue sanding sugar or sprinkles (optional for texture)
  • Small round piping tip and star tip (e.g., Wilton 1A and 1M), plus piping bags
  • Toothpicks or small offset spatula

Instructions

  • Bake the cupcakes: Prepare your cupcake batter according to the package or recipe. Line your pan, fill cups two-thirds full, and bake until a toothpick comes out clean. Let them cool completely on a wire rack.
  • Make the buttercream: Beat the softened butter until smooth and fluffy. Add powdered sugar gradually, alternating with milk, until creamy and spreadable. Mix in vanilla. Tint with blue gel food coloring until you reach a bold Stitch-blue shade.
  • Prepare the ears (option 1, marshmallows): Cut large marshmallows diagonally to make two ear shapes. Tint a little white frosting with purple, then spread or pipe a small triangle on the cut side to mimic the inner ear. Let them set in the fridge for 10 minutes.
  • Prepare the ears (option 2, fondant or candy melts): Roll blue fondant and cut ear shapes (teardrops with angled tips). Add a smaller purple piece on top for the inner ear. If using candy melts, pipe ear shapes onto parchment and add a purple center; chill to harden.
  • Frost the base: Fit a piping bag with a large round or star tip. Pipe a generous swirl of blue frosting on each cupcake. For a neat look, hold the bag straight up and spiral from the outside in, finishing with a small peak.
  • Add texture (optional): Dip the frosted tops lightly in blue sanding sugar for a fun, fuzzy effect reminiscent of Stitch’s fur.
  • Place the eyes: Press two candy eyes slightly off-center toward the top, leaving room for the nose and mouth below. If making eyes from fondant, cut small white circles and dot with black edible marker, then attach with a dab of frosting.
  • Draw the face: Use black decorating gel or melted dark chocolate in a fine-tip bag. Add a small oval nose just under the eyes, then a curved smile. For extra character, add a tiny line on each side for little cheek marks.
  • Attach the ears: Gently press one ear into each side of the frosting swirl. If they lean, anchor with toothpicks (remove before serving). Angle them slightly upward to capture Stitch’s playful look.
  • Finishing touches: Add a few mini blue sprinkles or a dab of darker blue frosting to suggest fur detail. Keep the design simple so the face stays the star.
  • Chill briefly: Refrigerate for 10–15 minutes to set the decorations. Serve at room temperature for the best taste and texture.
