Ingredients

3 ripe frozen bananas (peeled and thawed)

  • Frozen bananas are the star of this recipe providing natural sweetness and moisture. The more ripe, the better—they’re perfect for banana bread!

1/2 cup butter (softened)

  • You can also use coconut oil or vegetable oil for a lighter texture but butter adds a rich flavor that complements the sweetness of the bananas perfectly.

1 cup brown sugar

  • Brown sugar adds a rich mellow sweetness that intensifies the banana flavor. You can substitute with white sugar if needed, but brown will give your bread that classic flavor.

2 large eggs

  • Eggs are essential for binding the ingredients together giving your banana bread structure and helping it rise.

2 cups all-purpose flour

  • For a classic tender banana bread, all-purpose flour is the ideal choice. For a gluten-free version, you can substitute with a gluten-free flour blend.

1 teaspoon baking soda

  • Baking soda is what makes the bread rise giving it that perfect, fluffy texture.

1/2 teaspoon salt

  • A small amount of salt evens out the sweetness and boosts the overall flavor.

1 teaspoon vanilla extract

  • Vanilla adds a warm fragrant undertone to the bread. It pairs beautifully with the bananas.

1/2 teaspoon ground cinnamon (optional)

  • To enhance the flavor even more a dash of cinnamon is ideal. It adds warmth and depth, making your banana bread even more irresistible!

Instructions

Preheat Your Oven

  • Preheat your oven to 350°F (175°C). This ensures that the oven is at the perfect temperature when your banana bread goes in, helping it bake evenly.

Prepare the Pan

  • Grease a 9x5-inch loaf pan with butter or cooking spray to prevent the bread from sticking. For added convenience, you can also line it with parchment paper.

Mash the Bananas

  • Take your frozen bananas (now thawed) and place them in a bowl. Mash them with a fork or potato masher until smooth. It’s okay if there are a few small lumps—those will add to the texture of the bread!

Mix Wet Ingredients

  • In a large mixing bowl, beat the butter and brown sugar together until the mixture is light and fluffy. You can do this either with an electric mixer or by hand using a whisk. Next, add the eggs and vanilla extract, and continue beating until everything is thoroughly combined.

Combine the Bananas

  • Stir the mashed bananas into the wet ingredients. At this point, the mixture should be fragrant and a bit creamy, thanks to the bananas and butter!

Add Dry Ingredients

  • In another bowl, combine the flour, baking soda, and salt by whisking them together. Slowly incorporate the dry ingredients into the wet banana mixture, folding gently as you go. Don’t overwork the dough, as this can result in a dense loaf.

Pour and Smooth

  • Transfer the batter into the prepared loaf pan, using a spatula to spread it evenly across the top. If you’d like to add optional ingredients like chopped nuts or chocolate chips, carefully fold them in now.

Bake the Banana Bread

  • Put the pan in the oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Keep an eye on the bread towards the end—if the top starts to brown too quickly, you can cover it loosely with aluminum foil.

Cool and Serve

  • After baking, allow the banana bread to cool in the pan for approximately 10 minutes. Next, transfer it to a wire rack to cool completely. Once cooled, slice and enjoy!
